Clostridium botulinum are toxin-producing
bacteria that cause a rare but serious paralytic illness in humans called
botulism. Foodborne, wound, and infant botulism are the three main types of
illness caused by C. botulinum toxin. Since any infection with C. botulinum
can be fatal, all are considered medical emergencies.
Commonly found in soil, C. botulinum bacteria grow best in low oxygen
conditions. When the bacteria encounter harsh conditions such as high heat
or dry soil, the organisms form “spores” or a durable outer coating that
allow them to survive in a dormant state until conditions are more favorable
to their growth.
These bacteria can be found throughout the world. Cases usually occur
sporadically, but outbreaks can occur when food is prepared or preserved in a
way that does not destroy the spores and permits the formation of toxin. |
